Creamy Lemon Salmon Pasta 🐟
Flaked seared salmon folded into a bright lemon cream with spinach and penne, weeknight-fast but dinner-party worthy.
Ingredients (serves 4)
- 1 lb salmon
- 12 oz penne
- 1 lemon
- 4 cloves garlic
- 1 cup heavy cream
- 3 cups spinach
- 1/2 cup grated parmesan
- 2 tbsp olive oil
- 1/4 tsp black pepper

Boil the penne in salted water until al dente, reserving 1 cup pasta water before draining.

Season the salmon with salt and pepper. Heat the olive oil in a 12-inch skillet over medium-high and sear skin side up 4 minutes, flip, and cook until it flakes easily, about 3 more minutes. Set aside and remove the skin.

Cook the minced garlic in the same pan for 1 minute, then pour in the cream and the zest and juice of the lemon and simmer 3 minutes.

Stir in the parmesan and spinach until melted and wilted.

Add the penne and toss with pasta water until saucy, then fold in the salmon in big flakes.

Season with black pepper and serve immediately.
