  • 1 large onion
  • 8 slices Swiss cheese
  • 8 slices sourdough
  • 4 tbsp butter
  • 1 tbsp Worcestershire
  • 1 tsp salt
  • 1/2 tsp black pepper

    Slice the onion thin. Melt 1 tbsp butter in a 12-inch skillet over medium heat and cook the onions, stirring occasionally, until deep golden, about 15 minutes. Set aside.

    Divide the beef into 4 portions and shape into thin oval patties slightly larger than the bread. Season both sides with salt, pepper, and Worcestershire.

    Sear the patties over medium-high heat, about 3 minutes per side, until browned and cooked to 160°F.

    Butter one side of each bread slice. Build sandwiches butter side out with a slice of Swiss, a patty, a pile of onions, and another slice of Swiss.

    Griddle the sandwiches over medium heat, pressing gently, 3 to 4 minutes per side until the bread is deep golden and the cheese is fully melted.
