Classic Meatball Rice Bowl 🍖
Tender homemade meatballs simmered in tomato sauce over fluffy rice with fresh parmesan and basil.
Ingredients (serves 4)
- 1.25 lbs ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup parmesan cheese
- 2 cups rice
- 1.5 cups tomato sauce
- 2 garlic cloves
- 1 onion
- 2 tablespoons olive oil
- basil
- salt
- black pepper

Mix ground beef, breadcrumbs, egg, parmesan, minced garlic, salt, and pepper in a bowl.

Roll into 12-16 meatballs of equal size.

Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, about 8 minutes total. Remove and set aside.

Sauté diced onion in the same skillet until soft, about 3 minutes.

Add tomato sauce and return meatballs to the pan. Simmer for 20 minutes.
