Classic Mashed Potato Dinner with Roast Beef 🥔

Ingredients (serves 4)
- 2 lb beef roast (chuck or rump)
- 3 lb potatoes
- 6 tablespoons butter
- 1/2 cup heavy cream
- 1 onion
- 2 carrots
- 2 cloves garlic
- 2 cups beef stock
- 2 tablespoons tomato paste
- 1 tablespoon cornstarch

Pat beef dry and season with salt and pepper. Sear in a hot Dutch oven over high heat for 3 minutes per side until browned.

Remove beef and sauté onion, carrot, and garlic until softened, about 5 minutes. Stir in tomato paste.

Return beef to the Dutch oven and pour in beef stock. Bring to a simmer, cover, and braise for 60 minutes.

While beef braises, peel and cut potatoes into 2-inch chunks. Boil in salted water until fork-tender, about 20 minutes.
