Chicken & Wild Rice Soup 🍲
Hearty and nourishing with tender chicken in a wild rice base enriched with cream and fragrant vegetables.
Ingredients (serves 4)
- 2 cups cooked shredded chicken
- 1 cup wild rice uncooked
- 1 Onion
- 2 Carrot
- 2 Celery stalks
- 3 cloves Garlic
- 6 cups Chicken Stock
- 1/2 cup Heavy Cream
- 1 Bay Leaf
- 1 tsp Dried Thyme
- Salt
- Black Pepper

Dice onion, carrot, and celery into small pieces. Mince garlic.

In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery, cook 4 minutes until starting to soften.

Add garlic and cook for 30 seconds until fragrant.

Stir in wild rice, chicken stock, bay leaf, and thyme. Bring to a boil.

Reduce heat and simmer gently for 25 minutes until wild rice is tender.
