Ingredients (serves 4)

  • 2 lb chicken breast
  • 8 corn tortillas
  • 2 cups salsa
  • 1.5 cups cheddar cheese
  • 1 cup sour cream
  • 1 onion
  • 2 cloves garlic
  • Salt and black pepper

Instructions

    Preheat oven to 375 degrees F

    Boil chicken in salted water for 15 minutes until cooked through, let cool, then shred

    Dice onion and mince garlic, cook in a skillet for 2 minutes

    Mix shredded chicken with sour cream, onion, garlic, salt, and pepper

    Spread layer of salsa in bottom of 9x13 baking dish

    Fill tortillas with chicken mixture, roll, and place seam-side down on salsa

    Pour remaining salsa over tortillas and top with cheddar
