Chicken Broccoli Rice Casserole 🥦
Tender chicken, fluffy rice, and broccoli folded into a creamy cheddar sauce and baked until golden and bubbly.
Ingredients (serves 6)
- 1 lb chicken breast
- 1 cup rice
- 3 cups broccoli
- 2 cups shredded cheddar cheese
- 2 cups chicken stock
- 1 cup milk
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 onion
- 1 tsp garlic powder

Heat oven to 375°F. Cook the rice in the chicken stock in a covered saucepan until tender, about 18 minutes.

Meanwhile, cut the chicken into bite-size pieces and season with salt and pepper. Dice the onion and cut the broccoli into small florets.

Melt the butter in a large skillet over medium heat, cook the onion 3 minutes, then add the chicken and cook until no longer pink, about 6 minutes.

Sprinkle the flour over the skillet, stir 1 minute, then whisk in the milk and garlic powder. Simmer until thickened, about 3 minutes, then stir in half the cheddar.

Fold the cooked rice and broccoli into the sauce, transfer everything to a greased 9x13 baking dish, and top with the remaining cheddar.
