Cauliflower Cheese Bake 🥦
Roasty cauliflower florets drenched in a sharp cheddar Dijon sauce and baked under a crisp golden panko crust.
Ingredients (serves 4)
- 1 large cauliflower
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2.5 cups milk
- 2 cups shredded cheddar cheese
- 1 tbsp dijon mustard
- 3/4 cup panko
- 1/4 tsp nutmeg

Heat oven to 400°F. Cut the cauliflower into florets and boil in salted water for 4 minutes, then drain very well.

Melt the butter in a saucepan, whisk in the flour for 1 minute, then gradually whisk in the milk. Simmer until thickened, about 5 minutes.

Off the heat, stir in 1.5 cups of cheddar, the Dijon, nutmeg, 1/2 teaspoon salt, and black pepper.

Fold the cauliflower into the sauce, spread in a 9x13 dish, and top with the remaining cheddar and the panko.
