Ingredients (serves 4)

  • 2 cans black beans
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 onion
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 4 hamburger buns
  • 2 tbsp mayonnaise
  • 4 lettuce leaves
  • 1 tomato
  • 2 tbsp olive oil

    Drain and rinse the beans, then spread them on a baking sheet and bake at 325°F for 10 minutes to dry them out.

    Finely dice the onion and mince the garlic. Mash the beans in a bowl, leaving some texture.

    Mix in the onion, garlic, egg, breadcrumbs, cumin, smoked paprika, and a big pinch of salt. Shape into 4 patties and chill 10 minutes.

    Heat the olive oil in a 12-inch skillet over medium heat. Cook the patties 4 to 5 minutes per side until deeply crusted.

    Toast the buns and slice the tomato.

    Spread the buns with mayonnaise and stack with lettuce, patty, and tomato. Serve warm.
