Ingredients (serves 4)

  • 1.25 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 zucchini
  • 1 can crushed tomatoes
  • 3 garlic cloves
  • 1/4 cup parmesan
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt
  • Black pepper

    Mince garlic. Combine ground beef, breadcrumbs, egg, half the garlic, parmesan, salt, and pepper in a bowl.

    Form mixture into 16-18 meatballs.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown meatballs on all sides for 8 minutes, working in batches. Set aside.

    In the same skillet, heat remaining oil. Sauté remaining garlic for 1 minute, then add crushed tomatoes and oregano.

    Return meatballs to the sauce and simmer for 15 minutes.

    Spiralize zucchini into noodles. Lightly sauté noodles for 3 minutes, then plate and top with meatballs and sauce.
