Ingredients (serves 6)

  • 1 lb ground beef
  • 1 onion
  • 8 oz mushrooms
  • 2 cups frozen mixed vegetables
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1.5 cups milk
  • 1/2 cup beef stock
  • 1.5 cups shredded cheddar
  • 2 lbs frozen tater tots
  • 1 tsp salt
  • 1/2 tsp black pepper

    Heat oven to 400°F. Dice the onion and chop the mushrooms.

    Brown the ground beef with the onion in a 12-inch skillet over medium-high, about 6 minutes, then add mushrooms and cook 4 minutes more. Season with salt and pepper.

    Push the meat to one side, melt butter in the empty space, stir in flour for 1 minute, then whisk in milk and beef stock. Simmer 3 minutes until thick and creamy.

    Stir in the frozen mixed vegetables and half the cheddar, then spread everything into a 9x13 inch baking dish.

    Arrange the frozen tater tots in tight rows over the top and scatter with remaining cheddar.
