Szechuan Chicken Noodles 🌶️
Springy noodles coated in a spicy sesame-soy sauce with tender chicken, peanuts, and scallions, bold heat and rich flavor.
Ingredients (serves 4)
- 12 oz ramen noodles
- 1.5 lbs cooked chicken breast
- 1/2 cup peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 tablespoons chili oil
- 4 cloves garlic
- 1 tablespoon ginger
- 4 scallions
- 1/4 cup roasted peanuts

Cook ramen noodles according to package directions. Drain and rinse with cold water.

Shred cooked chicken into bite-sized pieces.

In a large bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, chili oil, minced garlic, and ginger until smooth.
