Spinach and Ricotta Calzone 🥟
Creamy garlicky ricotta and tender spinach sealed inside a crusty golden shell.
Ingredients (serves 4)
- 1 lb pizza dough
- 4 cups spinach
- 2 cloves garlic
- 1 tbsp olive oil
- 1 cup ricotta
- 6 oz mozzarella
- 1/4 cup grated parmesan
- 1 egg
- 1 cup marinara sauce

Heat the oven to 450°F. Cook the minced garlic in olive oil, add the spinach, and wilt for 2 minutes, then squeeze out excess liquid.

Stir the spinach into the ricotta with shredded mozzarella, parmesan, salt, and pepper.

Divide the dough into 4 pieces and roll each into an 8-inch round.

Fill one half of each round with the spinach mixture, fold over, and crimp the edges shut.
