Smoky Black Bean Chili 🫘
Black beans and corn in a smoky, deeply spiced tomato base, a fast meatless chili with serious backbone.
Ingredients (serves 4)
- 2 cans black beans
- 1 onion
- 1 bell pepper
- 3 cloves garlic
- 1 can crushed tomatoes
- 1 cup frozen corn
- 2 tbsp chili powder
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 cup vegetable stock
- 1 lime

Dice the onion and bell pepper. Heat 2 tbsp oil in a large pot over medium-high heat and cook them until soft, about 5 minutes.

Stir in minced garlic, chili powder, smoked paprika, and cumin and cook for 1 minute until fragrant.

Add the crushed tomatoes, drained black beans, corn, and vegetable stock. Bring to a simmer.
