Ingredients (serves 4)

  • 2 cans black beans
  • 1 onion
  • 1 bell pepper
  • 3 cloves garlic
  • 1 can crushed tomatoes
  • 1 cup frozen corn
  • 2 tbsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 cup vegetable stock
  • 1 lime

    Dice the onion and bell pepper. Heat 2 tbsp oil in a large pot over medium-high heat and cook them until soft, about 5 minutes.

    Stir in minced garlic, chili powder, smoked paprika, and cumin and cook for 1 minute until fragrant.

    Add the crushed tomatoes, drained black beans, corn, and vegetable stock. Bring to a simmer.
