Ingredients (serves 2)

  • 2 packs ramen noodles
  • 2 eggs
  • 3 cups shredded cabbage
  • 1 carrot
  • 3 scallions
  • 3 tbsp soy sauce
  • 2 cloves garlic
  • 1 tsp sesame oil
  • 1 tsp sriracha
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

    Stir together the soy sauce, sesame oil, sriracha, brown sugar, and 2 tablespoons water. Shred the cabbage and carrot, slice the scallions, and mince the garlic.

    Boil the ramen noodles without the seasoning packets for 2 minutes, drain, and rinse briefly so they do not clump.

    Heat 1 tablespoon oil in a large skillet over high heat, scramble the eggs to soft curds, and set aside.

    Add the remaining oil and stir-fry the cabbage and carrot until crisp-tender, about 3 minutes, adding the garlic for the last 30 seconds.

    Add the noodles, sauce, and eggs and toss over high heat until glossy and hot, about 2 minutes.
