Ingredients (serves 4)

  • 1 lb paneer cheese
  • 1.5 cups canned tomatoes
  • 1 cup heavy cream
  • 1 onion
  • 4 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp garam masala
  • 1 tsp paprika
  • 0.5 tsp cayenne
  • 2 tbsp olive oil
  • 1 tsp salt

    Cut paneer into 1-inch cubes. Heat 1 tbsp oil in a large skillet over medium-high heat. Pan-fry paneer cubes 2 minutes per side until golden. Set aside.

    In same skillet, heat remaining oil. Sauté diced onion until golden, about 5 minutes. Add minced garlic and ginger, cook 1 minute.

    Stir in garam masala, paprika, and cayenne, cook 1 minute until fragrant. Add canned tomatoes with juices.

    Simmer for 10-12 minutes, breaking up tomatoes with a spoon as they cook.

    Stir in heavy cream and salt. Add paneer cubes back to skillet. Simmer 5 more minutes until heated through and sauce coats paneer.

    Serve hot over basmati rice with a dollop of yogurt and fresh cilantro.
