Ingredients (serves 4)

  • 1.5 lbs beef stew meat
  • 2 onions
  • 1 cup canned tomatoes
  • 4 cloves garlic
  • 2 tbsp ginger
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 0.5 tsp cayenne
  • 3 tbsp olive oil
  • Salt
  • Fresh cilantro

    Trim beef pieces of excess fat. Heat oil in a large heavy pot over medium-high heat.

    Brown beef in batches, 3-4 minutes per side. Transfer to a plate. Sauté diced onions until deep golden, about 8 minutes.

    Add minced garlic and half the ginger, cook 1 minute. Stir in garam masala, cumin, coriander, and cayenne, cook 1 minute.

    Add canned tomatoes and return beef to pot with 2 cups water. Bring to simmer, cover, and cook 60-70 minutes until beef is very tender.

    Stir in remaining fresh minced ginger. Simmer uncovered 5 more minutes. Season with salt.

    Garnish with fresh cilantro and serve hot with naan or basmati rice.
