Hearty Lentil Stew 🥣
Earthy lentils, carrots, and potatoes simmered until thick and spoon-coating, humble ingredients turned deeply satisfying.
Ingredients (serves 4)
- 1.5 cups lentils
- 1 onion
- 3 carrots
- 2 potatoes
- 3 cloves garlic
- 2 tbsp tomato paste
- 6 cups vegetable stock
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 bay leaves
- 2 tbsp olive oil

Dice the onion and carrots. Heat the olive oil in a large pot over medium heat and cook them until soft, about 6 minutes.

Stir in minced garlic, cumin, smoked paprika, and tomato paste and cook for 1 minute.

Add the rinsed lentils, cubed potatoes, vegetable stock, and bay leaves. Bring to a boil.

Reduce to a simmer and cook, stirring occasionally, until the lentils and potatoes are tender and the stew is thick, about 30 minutes.
