Ingredients (serves 4)

  • 1.5 cups lentils
  • 1 onion
  • 3 carrots
  • 2 potatoes
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 6 cups vegetable stock
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 2 tbsp olive oil

    Dice the onion and carrots. Heat the olive oil in a large pot over medium heat and cook them until soft, about 6 minutes.

    Stir in minced garlic, cumin, smoked paprika, and tomato paste and cook for 1 minute.

    Add the rinsed lentils, cubed potatoes, vegetable stock, and bay leaves. Bring to a boil.

    Reduce to a simmer and cook, stirring occasionally, until the lentils and potatoes are tender and the stew is thick, about 30 minutes.

    Discard the bay leaves, mash a few spoonfuls against the side of the pot to thicken, and season with salt and pepper.
