Hearty Beef Stew 🥘
Chunks of beef, potatoes, and carrots simmered in a rich broth until every spoonful tastes like a hug.
Ingredients (serves 6)
- 2 lbs stew beef
- 1 lb potatoes
- 3 carrots
- 1 onion
- 2 stalks celery
- 4 cups beef stock
- 3 tbsp tomato paste
- 3 tbsp all-purpose flour
- 2 bay leaves
- 2 tbsp vegetable oil
- 1 cup frozen peas

Pat the beef dry, season with salt and pepper, and toss with the flour.

Heat the oil in a large Dutch oven over medium high heat and brown the beef in batches, about 8 minutes total. Set aside.

Add the diced onion and celery and cook for 4 minutes, then stir in the tomato paste for 1 minute.

Pour in the beef stock, scrape up the browned bits, return the beef, and add the bay leaves. Cover and simmer low for 45 minutes.

Add the chunked potatoes and carrots and simmer until the vegetables and beef are tender, about 25 minutes.

Stir in the frozen peas for the last 3 minutes, discard the bay leaves, and season to taste.
