Ingredients (serves 6)

  • 2 cups diced ham
  • 4 potatoes
  • 1 onion
  • 2 carrots
  • 2 stalks celery
  • 3 cloves garlic
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 cup shredded cheddar cheese
  • salt and black pepper

    Peel and dice the potatoes, and chop the onion, carrots, and celery.

    Melt the butter in a large pot over medium heat and cook the onion, carrots, and celery until soft, about 6 minutes. Stir in the garlic for 1 minute.

    Sprinkle in the flour and stir for 1 minute, then slowly whisk in the chicken stock.

    Add the potatoes and ham, bring to a simmer, and cook until the potatoes are fork tender, about 15 minutes.

    Mash a few potatoes against the side of the pot to thicken, then stir in the cream and cheddar until melted.
