Green Chile Pork Stew 🍲
Fork-tender pork and potatoes simmered low and slow in a tangy, gently spicy green chile broth.
Ingredients (serves 4)
- 1.5 lbs pork tenderloin
- 2 tbsp vegetable oil
- 1 onion
- 3 cloves garlic
- 2 cans green chiles
- 1 cup salsa verde
- 3 cups chicken stock
- 2 potatoes
- 1 tsp cumin
- 1 tsp oregano
- 0.25 cup cilantro

Cut the pork into 1 inch cubes, season with salt and pepper, and brown in the oil over medium high in batches, about 6 minutes total.

Dice the onion and mince the garlic, then cook in the same pot until soft, about 4 minutes.

Add the green chiles, salsa verde, chicken stock, cumin, and oregano and return the pork to the pot.

Simmer partially covered until the pork is tender, about 35 minutes.
