Glazed Pork Tenderloin with Apples 🍎

Ingredients (serves 6)
- 2 lb pork tenderloin
- 4 tablespoons butter
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh thyme
- 4 apples
- 1 onion
- Salt and black pepper to taste
- 1 tablespoon olive oil

Preheat oven to 400°F. Pat pork dry and season with salt and pepper.

Heat olive oil in a large oven-safe skillet over medium-high heat. Sear pork on all sides until browned, about 8 minutes. Remove and set aside.

Whisk together apple cider vinegar, brown sugar, mustard, and thyme. Return pork to the skillet and coat with glaze.

Roast for 20 to 25 minutes until internal temperature reaches 145°F.
