Ingredients (serves 4)
- 1.5 lbs chicken breast
- 1 cup milk
- 1 egg
- 1.5 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tsp paprika
- 1 tsp garlic powder
- 1.5 tsp salt
- 1/2 tsp black pepper
- 4 cups vegetable oil
- 1/2 cup bbq sauce

Cut the chicken into 1-inch bites and soak in the milk whisked with the egg and 1/2 teaspoon of salt for 10 minutes.

Whisk the flour, cornstarch, paprika, garlic powder, remaining salt, and pepper in a bowl, then drizzle in a spoonful of the milk mixture and toss to make shaggy crumbs for extra crunch.

Heat the oil in a deep pot to 350°F.

Working in batches, lift the chicken from the milk, toss firmly in the flour mixture, and shake off excess.
