Ingredients (serves 4)

  • 1 1/2 lbs steak
  • 1 1/2 cups all-purpose flour
  • 2 eggs
  • 2 1/2 cups milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 cup vegetable oil

    Cut the steak into 4 portions and pound each between plastic wrap to 1/4 inch thick.

    Whisk the eggs with 1/2 cup milk in one dish, and mix the flour, garlic powder, paprika, salt, and 1 tsp pepper in another.

    Dredge each steak in flour, then egg, then flour again, pressing hard so the coating sticks.

    Heat the oil in a 12 inch skillet to 350°F and fry the steaks 3 to 4 minutes per side until deep golden, then drain on a rack.

    Pour off all but 3 tbsp of oil, whisk in 3 tbsp of the seasoned flour, and cook 1 minute until bubbling.

    Slowly whisk in the remaining 2 cups milk and simmer until the gravy thickens, about 4 minutes, then season generously with black pepper.

    Smother the steaks in gravy and serve hot.
