Cornmeal Fried Fish 🐟
Flaky white fish in a crackly cornmeal crust with lemon and hot sauce, fish fry night at home.
Ingredients (serves 4)
- 4 tilapia fillets
- 3/4 cup cornmeal
- 1/4 cup all-purpose flour
- 1 egg
- 1/2 cup milk
- 1 tsp paprika
- 1/2 tsp cayenne
- 1 lemon
- 2 cups vegetable oil
- 1 tsp hot sauce

Pat the fillets dry and season both sides with salt and pepper.

Whisk the egg with the milk in a shallow dish, and mix the cornmeal, flour, paprika, cayenne, and 1 tsp salt in another.

Heat 1/2 inch of oil in a 12 inch skillet to 350°F.

Dip each fillet in the egg wash, press into the cornmeal coating, and fry 3 minutes per side until golden and the fish flakes easily.

Drain on a rack and hit with a pinch of salt straight out of the oil.
