Ingredients (serves 4)

  • 2 cans chickpeas
  • 1 can coconut milk
  • 2 cans crushed tomatoes
  • 1 onion
  • 4 cloves garlic
  • 2 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 2 tbsp vegetable oil
  • Salt and pepper
  • Cilantro

Instructions

    Heat vegetable oil in a large pot over medium heat. Dice onion and cook until soft, about 5 minutes.

    Add minced garlic and ginger, cook 1 minute until fragrant.
