Whisk the eggs with 0.5 cup milk in one shallow dish. In another, mix the flour with the garlic powder, paprika, 1 teaspoon pepper, and salt.

Dredge each steak in flour, dip in the egg wash, then press firmly back into the flour for a thick craggy coating.
- 3
Heat the oil in a 12-inch cast iron skillet over medium high heat to 350°F and fry the steaks two at a time until deep golden, about 3 minutes per side.
- 4
Drain the steaks on a rack and keep warm in a 200°F oven.
- 5
Pour off all but 3 tablespoons of oil, whisk in 3 tablespoons of the seasoned flour, and cook for 1 minute.
- 6
Slowly whisk in the remaining 1 cup milk and simmer until the gravy is thick, about 3 minutes, seasoning heavily with black pepper.
- 7
Smother the steaks in gravy and serve with mashed potatoes.
