Ingredients (serves 4)

  • 1 lb ground beef
  • 2 cups pasta
  • 1 onion
  • 3 cloves garlic
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 can canned tomatoes
  • 1 can kidney beans
  • 2.5 cups beef stock
  • 1.5 cups shredded cheddar
  • 1 tsp salt

    Dice the onion and mince the garlic. Brown the ground beef with the onion in a Dutch oven over medium-high heat, about 6 minutes.

    Stir in garlic, chili powder, and cumin and toast 1 minute until fragrant.

    Add canned tomatoes, drained kidney beans, beef stock, salt, and the dry pasta. Bring to a boil.

    Cover, reduce to a simmer, and cook 11 minutes, stirring twice, until the pasta is tender.

    Turn off the heat and stir in 1 cup of cheddar until creamy, then scatter the rest on top and cover 2 minutes to melt.
