Cheeseburger Soup 🍲

Ingredients (serves 6)
- 1 lb ground beef
- 3 potatoes
- 1 onion
- 2 carrots
- 2 celery stalks
- 4 cups chicken stock
- 1 cup milk
- 2 cups shredded cheddar cheese
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1/2 cup sour cream

Brown the ground beef in a large pot over medium-high heat, about 6 minutes, then transfer to a plate and drain the fat.

Melt the butter in the pot and cook the diced onion, carrots, and celery until soft, about 6 minutes.

Sprinkle in the flour, stir 1 minute, then whisk in the chicken stock. Add the potatoes cut into 1/2-inch cubes and 1 tsp salt.
