Beer Braised Beef Stew 🍺
Beef braised low and slow in dark beer with carrots and potatoes, deep pub flavor from one heavy pot.
Ingredients (serves 6)
- 2 lb stew beef
- 1 bottle beer
- 3 carrots
- 3 potatoes
- 1 onion
- 3 cloves garlic
- 2 tbsp tomato paste
- 3 cups beef stock
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- 2 bay leaves

Pat the beef dry, season with salt and pepper, and toss with the flour. Heat 2 tbsp oil in a Dutch oven over medium-high heat and brown in batches, 4 minutes per batch.

Dice the onion and cook in the same pot until golden, 5 minutes, then stir in minced garlic and tomato paste for 1 minute.

Pour in the beer and scrape up all the browned bits, then add beef stock, thyme, bay leaves, and the beef.

Cover and simmer on low for 50 minutes.

Add the carrots and potatoes cut into big chunks and simmer uncovered until everything is fork tender, about 25 minutes.

Discard the bay leaves, season to taste, and serve with crusty bread.
