Time by type of dinner

What you're cooking predicts the clock better than what you're cooking with. The same chicken breast is a 22-minute stir-fry or a 45-minute casserole; the difference is surface area and whether an oven is involved.

Note what the cost column does as the clock runs longer: the slowest categories are among the cheapest. Soups and stews are the clearest case — 40 minutes, mostly unattended, at $1.80 a serving, because time is what makes cheap ingredients taste like something.

Beginners don't cook slower

A reasonable assumption is that simpler recipes are faster ones. They aren't: the 749 beginner-rated dinners in the catalog carry the same 30-minute median as the catalog overall. What changes with difficulty is step count and technique — how many things happen at once, whether anything has to be watched — not elapsed time. The median dinner is 6 steps long regardless.

The genuinely fast tier is its own thing: 431 dinners carry the quick tag, at a median of 22 minutes. They're fast because of structure — thin cuts, one pan, no preheat, nothing that needs to rest — not because they're easy.

The honest caveats

These are total elapsed times, not active work: a 90-minute braise is fifteen minutes of chopping and searing followed by seventy-five minutes of ignoring it, and this data can't tell those apart. Times also assume the ingredients are in the house and you've read the recipe once — the real weeknight killer is usually the decision, not the cooking. And they're recipe-writer estimates, checked for internal consistency across a 1,763-recipe catalog but not stopwatch-verified in a test kitchen. Treat the medians as a planning tool: if you have half an hour, half the catalog is open to you.
