Ingredients (serves 4)

  • 1.5 lbs pork tenderloin
  • 1/2 cup cornstarch
  • 2 eggs
  • 1 bell pepper
  • 1 can pineapple chunks
  • 1/4 cup rice vinegar
  • 3 tablespoons ketchup
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 3 cloves garlic

    Cut pork into 1-inch chunks. Beat eggs in a bowl and mix cornstarch with 1 teaspoon salt.

    Dip pork pieces in egg, then coat with cornstarch. Heat oil in a large skillet over medium-high heat.

    Working in batches, fry pork until golden brown, about 6-7 minutes per batch. Remove and set aside.

    Cut bell pepper into 1-inch chunks. Drain pineapple, reserving juice.

    In the same skillet, add minced garlic and cook for 30 seconds. Stir in rice vinegar, ketchup, sugar, soy sauce, and 1/4 cup pineapple juice.

    Return pork to skillet. Add bell pepper and pineapple chunks. Toss everything and cook for 3-4 minutes until sauce coats everything and bell pepper is tender-crisp. Serve over rice.
