One-Pot Chili Mac 🧀
Beefy chili and cheesy macaroni cooked together in one pot, the weeknight mash-up kids and grownups fight over.
Ingredients (serves 4)
- 1 lb ground beef
- 2 cups pasta
- 1 onion
- 3 cloves garlic
- 1 can crushed tomatoes
- 1 can kidney beans
- 2 tbsp chili powder
- 1 tsp cumin
- 3 cups beef stock
- 2 cups shredded cheddar cheese

Dice the onion and mince the garlic. Brown the ground beef in a large pot over medium-high heat, about 6 minutes, then drain excess fat.

Add the onion and cook until soft, 4 minutes, then stir in garlic, chili powder, and cumin for 1 minute.

Add the crushed tomatoes, drained beans, beef stock, and dry pasta. Stir well and bring to a boil.

Reduce to a steady simmer, cover, and cook, stirring occasionally so the pasta does not stick, until the pasta is al dente, about 12 minutes.

Turn off the heat, stir in half the cheddar, and top with the rest. Cover 2 minutes until melted, then serve.
