Lentil Sloppy Joes 🍔
Saucy, tangy, and hearty enough to fool the biggest skeptic, this meatless take on the lunchroom legend piles high on a toasted bun.
Ingredients (serves 4)
- 1 cup lentils
- 1 onion
- 1 bell pepper
- 2 cloves garlic
- 1 can tomato sauce
- 3 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp brown sugar
- 2 tsp chili powder
- 1 tbsp soy sauce
- 4 hamburger buns

Rinse the lentils, cover with 3 cups water in a saucepan, and simmer until tender but not mushy, about 20 minutes. Drain.

Meanwhile, dice the onion and bell pepper and mince the garlic. Cook them in a splash of oil in a large skillet over medium heat until soft, about 6 minutes.

Stir in the chili powder and garlic and cook 1 minute until fragrant.

Add the drained lentils, tomato sauce, ketchup, mustard, brown sugar, and soy sauce. Simmer until thick and spoonable, about 8 minutes.

Taste and season with salt and black pepper, adding a splash of water if the mixture gets too thick.
