Sheet Pan Pork Tenderloin Dinner 🥩
Garlicky herb rubbed pork tenderloin roasted over green beans and baby potatoes, a Sunday-worthy dinner with weeknight effort.
Ingredients (serves 4)
- 1.5 lb pork tenderloin
- 1 lb green beans
- 1 lb potato
- 3 tbsp olive oil
- 4 cloves garlic
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tbsp dijon mustard
- 0.5 tsp salt

Heat the oven to 425°F.

Cut the potatoes into 1 inch chunks, toss with 1 tablespoon oil and salt, and roast on a sheet pan 12 minutes.

Rub the pork with Dijon, minced garlic, rosemary, thyme, and 1 tablespoon oil.

Trim the green beans and toss with the remaining oil, then push the potatoes aside and add the beans and pork to the pan.
